Fresh Mozzarella & Tomato Pasta with Breadsticks


I bought some fresh mozzarella the other day and needed a great recipe to use it in. This was delicious! I would recommend it to anyone who is a pasta lover and needs a pretty easy idea for dinner.


Fresh Mozzarella & Tomato Pasta
8 oz fresh mozzarella, cut into small cubes
3 medium tomatoes or 5-6 Roma tomatoes, peeled and diced
3 cloves minced garlic
1/2 c. extra-virgin olive oil
1/2 c. coursely-chopped fresh basil
1 Tbsp. lemon juice
1 Tbsp. course salt
Freshly ground black pepper to taste
1 (16 oz) package uncooked pasta (farfalle, penne, fusilloni...)
Freshly-grated parmesan cheese

In a large bowl, toss mozzarella cheese with tomatoes, garlic, olive oil, basil, lemon juice, salt, and pepper. Let stand at room temperature for at least 30 minutes. Cook pasta, drain, and return to pan to keep warm. Add tomato mixture to pasta and toss to coat thoroughly.


These breadsticks were a perfect addition to this Italian feast. I got the recipe from Favorite Family Recipes, which I love!
Breadsticks
1 1/2 c. warm water
2 Tbsp. sugar
1 Tbsp. yeast

Let that sit for 5 minutes, then add:
3 1/2 c. flour
1 tsp. salt

Mix until smooth then let raise for 10 minutes. Roll out dough into a large square on a floured surface. Brush with melted butter mixed with some garlic and Italian seasoning, then sprinkle with kosher salt. Fold in half and cut into 1 inch strips. Twist and place on a cookie sheet. Let sit for 15-20 minutes to raise. Bake at 400 degrees for 15-20 minutes or until golden brown. Immediately after baking, brush with more garlic butter and sprinkle with kosher salt and parmesan cheese.
